Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • ½ cup rolled oats (or oat flour)

  • ½ teaspoon baking powder

  • Pinch of salt

  • ½ teaspoon cinnamon or vanilla (optional)

  • Cooking spray or a little oil for pan

Optional toppings (no added sugar):

  • Fresh berries

  • Greek yogurt

  • Peanut butter

  • Honey or maple syrup (optional)


Instructions

  1. Blend batter
    Add cottage cheese, eggs, oats, baking powder, salt, and cinnamon to a blender. Blend until smooth.

  2. Heat pan
    Heat a non-stick pan over medium heat and lightly coat with cooking spray.

  3. Cook pancakes
    Pour small circles of batter into the pan. Cook 2–3 minutes until bubbles form.

  4. Flip
    Flip gently and cook another 1–2 minutes until golden.

  5. Serve
    Serve warm with your favorite healthy toppings.
