🛒 Ingredients (Serves 4)

  • 2 cups cottage cheese
  • 2 eggs
  • 1 cup spinach (chopped)
  • 1/2 cup bell peppers (diced)
  • 1/2 cup zucchini (grated or chopped)
  • 1/4 cup onion (finely chopped)
  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or mixed herbs
  • Salt & black pepper (to taste)

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Grease a small baking dish.
  2. In a bowl, whisk eggs + cottage cheese until smooth.
  3. Add all chopped veggies, olive oil, spices, salt, and pepper.
  4. Mix in half of the shredded cheese.
