Cranberry Orange Cottage Cheese Breakfast Bake 🍊🧀 – Protein-Packed, Bright & Delicious
Ingredients (serves about 8):
2 cups cottage cheese
1 cup rolled oats
1/2 cup dried cranberries
1/2 cup orange juice
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 large eggs
1 tablespoon orange zest

Directions:
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish and set aside.
Step 2: In a large mixing bowl, combine the cottage cheese, rolled oats, dried cranberries, orange juice, honey, eggs, vanilla extract, baking powder, cinnamon, salt, and orange zest. Stir thoroughly until everything is evenly incorporated.
Step 3: Pour the mixture into the prepared baking dish and spread it out evenly for consistent baking.
Step 4: Bake for 35–40 minutes, or until the top is set and lightly golden. The center should feel firm when gently pressed.
