Ingredients

Corn kernels (fresh, grilled, or thawed frozen)
 Butter, 3 tablespoons
 Mayonnaise, 3 tablespoons
Mexican crema or sour cream, 1/2 cup
 Cotija cheese, crumbled
 Garlic, minced (optional)
 Jalapeño, finely chopped (optional)
 Lime juice, freshly squeezed
 Chili powder, 1 teaspoon
 Salt, to taste
 Fresh cilantro, chopped

Steps

Melt 3 tablespoons of butter in a skillet over medium heat without browning it.

Add the corn kernels to the skillet and sauté for 5 to 7 minutes until lightly charred.

In a large bowl, mix 3 tablespoons mayonnaise, 1/2 cup Mexican crema, minced garlic (optional), finely chopped jalapeño (optional), lime juice, 1 teaspoon chili powder, and a pinch of salt.

Add the warm, slightly charred corn to the creamy mixture and toss until evenly coated.

Scoop the corn mixture into individual serving cups for an easy and festive presentation.

Top with crumbled Cotija cheese, extra chili powder, and chopped cilantro. Serve with lime wedges on the side.

Tips

  1. Adjust the spice level by modifying the amount of jalapeño and chili powder.
  2. Grill the corn for a smoky flavor before sautéing.
