Crispy Brussels Sprouts with Maple Bacon Glaze delight
Crispy on the outside and tender inside, these Brussels sprouts are roasted with smoky bacon and finished in a luscious maple glaze. The combination of caramelized edges, salty bacon, and sweet maple syrup makes this dish irresistible — perfect for holidays, weeknight dinners, or when you need a quick gourmet side.
Ingredients1 ½ lbs (680 g) Brussels sprouts, trimmed and halved
6 slices thick-cut bacon, chopped
2 tbsp olive oil
Salt and pepper, to taste
3 tbsp pure maple syrup
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tbsp soy sauce or tamari
1 tsp garlic powder
Optional: pinch of red pepper flakes for a spicy kick
Instructions
Preheat oven to 400°F (200°C).
Rinse and trim Brussels sprouts, cutting large ones in half. Toss them in a bowl with olive oil, salt, and pepper until evenly coated.
In a large oven-safe skillet or baking sheet, arrange chopped bacon and Brussels sprouts together. Roast for 25–30 minutes, stirring halfway, until the sprouts are golden and crispy and bacon is rendered.
While the sprouts roast, whisk maple syrup, Dijon mustard, vinegar, soy sauce, and garlic powder in a small saucepan. Bring to a simmer over medium heat and cook for 2–3 minutes, until slightly thickened.
Remove roasted Brussels sprouts and bacon from the oven. Drizzle the warm maple glaze over them and toss gently to coat. Return to the oven for 5 more minutes to caramelize the glaze.
Transfer to a serving bowl and garnish with extra bacon bits or chopped parsley. Serve hot as a side for roast chicken, steak, or holiday meals.
Notes
For a spicier version, add a pinch of red pepper flakes to the maple glaze.
