Ingredients
3 chicken breast
1 to 2 cans enchilada sauce depending on what you prefer
1/2 onion diced
Black olives
2 1/2 to 3 c Shredded cheddar cheese
Low carb tortilla shells cut in small strips then pieces
In crockpot place chicken and top with enchilada sauce.
Cover set on high for 4 hours.
Then add in tortilla shells that are cut.
Add onion and half of black olives and half of cheese!
Stir to combine.
Then top with remaining cheese and black olives.
Cover and cook for another 40 minutes!
Serve with toppings of your choice like
Sour cream, avocado, jalapeños or green onions. Whatever your heart desires!
