Cucumber Lemonade
A cool, refreshing twist on classic lemonade—perfect for warm days.
Ingredients:
1 large cucumber, peeled and chopped
3–4 lemons (juiced)
4 cups cold water
3–4 tbsp honey or sweetener of your choice (adjust to taste)
Ice cubes (optional)
Fresh mint leaves (optional, for garnish)
Instructions:
Blend the cucumber
In a blender, combine the peeled and chopped cucumber with 2 cups of water. Blend until smooth, then strain the mixture using a fine sieve or cheesecloth to remove pulp.
Make the lemonade
In a pitcher, combine the cucumber juice, freshly squeezed lemon juice, and the remaining 2 cups of water. Stir in the honey (or your preferred sweetener) until dissolved.
Taste and adjust
Taste the lemonade and adjust the sweetness or tartness by adding more honey or lemon juice as desired.
Chill and serve
Refrigerate the lemonade for at least 30 minutes to chill. Serve over ice and garnish with fresh mint leaves.
