Easy Weight Watchers Chicken Salad Sandwich
Ingredients (makes 4 sandwiches)
2 cups cooked chicken breast, shredded or diced
2 tbsp plain non-fat Greek yogurt
2 tbsp light mayonnaise
1 stalk celery, finely chopped
2 tbsp red onion, finely chopped
1 tsp Dijon mustard
1 tsp lemon juice
Salt and pepper to taste
8 slices whole wheat bread
Lettuce leaves or tomato slices (optional)
Instructions
Make the Chicken Salad
In a bowl, combine chicken, Greek yogurt, mayonnaise, celery, onion, mustard, and lemon juice.
Mix well and season with salt and pepper.
Assemble the Sandwiches
Spread the chicken salad evenly on 4 slices of bread.
Top with lettuce or tomato if desired.
Cover with the remaining 4 slices of bread.
Serve
Slice sandwiches in half and enjoy immediately.
Use leftover cooked chicken or rotisserie chicken to save time.
Add sliced grapes, apple chunks, or nuts for extra flavor.
