Ingredients

  • 3 cups cooked rice preferably chilled, day-old rice works best
  • 3 large eggs beaten
  • 2 tbsp oil vegetable, canola, or sesame
  • 1 small onion finely chopped
  • 2 –3 green onions sliced
  • 1 cup mixed vegetables peas, carrots, corn — fresh or frozen
  • 2 tbsp soy sauce adjust to taste
  • 1 tsp sesame oil optional, for flavor
  • Salt and black pepper to taste

Instructions

  • Prepare the rice:
  • Break up clumps of cooked rice so it’s loose and easy to stir-fry.
  • Cook the eggs:
  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Pour in beaten eggs and scramble until just set. Remove eggs and set aside.
  • Sauté aromatics and veggies:
  • In the same pan, add the remaining oil. Stir-fry onion and mixed vegetables for 2–3 minutes until softened.
  • Add rice:
  • Increase heat to high. Add rice to the pan and stir-fry, pressing down with a spatula to break apart clumps. Cook for 3–4 minutes until heated through.
  • Season and combine:
  • Stir in soy sauce, sesame oil (if using), salt, and pepper. Return scrambled eggs and green onions to the pan. Mix well.
  • Serve hot:
  • Enjoy as a main dish or as a side with your favorite stir-fry or protein.
