Instructions

  1. Preheat oven

    • Preheat to 375°F (190°C). Lightly grease a casserole dish.

  2. Season chicken

    • In a large bowl, mix chicken with fajita seasoning, paprika, cumin, garlic powder, and pepper.

  3. Add veggies & sauce

    • Add bell peppers, onion, corn, and beans.

    • Stir in salsa and sour cream until well combined.

  4. Assemble casserole

    • Transfer mixture to prepared baking dish.

    • Spread evenly and sprinkle cheese on top.

  5. Bake

    • Cover with foil and bake 25 minutes.

    • Uncover and bake another 10–15 minutes until bubbly and lightly golden.

    • Let rest 5 minutes. Garnish with cilantro and serve.
