Feta and Cranberry Chickpeas with Orange Vinaigrette
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1/2 cup dried cranberries
1/2 cup crumbled feta cheese
2 cups mixed greens (spinach, arugula, or lettuce)
1/4 cup sliced red onion
1/4 cup chopped walnuts or pecans (optional)
For the Orange Vinaigrette:
1/4 cup fresh orange juice
2 tablespoons olive oil
1 teaspoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and black pepper to taste
Directions:
In a large bowl, combine chickpeas, cranberries, feta, mixed greens, red onion, and nuts (if using).
In a small bowl, whisk together orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
Drizzle the vinaigrette over the chickpea mixture and toss gently to coat.
Serve immediately or chill for 15–20 minutes for flavors to meld.
