Garlic Herb Chicken with Creamy Mashed Potatoes & Sautéed Veggies 


Tender, juicy garlic-herb chicken served with fluffy mashed potatoes and buttery green beans & carrots — a simple, comforting, restaurant-style plate.
Ingredients
Garlic Herb Chicken
2 chicken breasts
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
1 tsp Italian seasoning
1 tsp paprika
Salt & black pepper
Optional: splash of balsamic glaze for finishing
Mashed Potatoes
3–4 potatoes, peeled & cubed
2 tbsp butter
¼ cup milk or cream
Salt & pepper
Veggies
1 cup green beans
1–2 carrots, sliced into strips
1 tbsp butter or olive oil
Salt, pepper, garlic powder
Directions
Make the Mashed Potatoes
Boil potatoes 10–12 minutes until soft.
Mash with butter, milk/cream, salt, and pepper until smooth.
Cook the Veggies
Sauté carrots and green beans in butter/oil over medium heat.
Add salt, pepper, and garlic powder.
Cook 6–8 minutes until tender with a slight bite.
Cook the Garlic Herb Chicken
Season chicken with salt, pepper, paprika, and Italian seasoning.
Heat oil and butter in a skillet.
Add garlic, then chicken.
Cook 6–7 minutes per side until golden and cooked through.
Optional: drizzle a touch of balsamic glaze over the chicken.
Assemble
Plate mashed potatoes high and fluffy, add the veggies, and nestle the chicken beside them.
Garnish with parsley if desired.
