INGREDIENTS:
For the Chicken: 4 chicken breasts 2 tablespoons olive oil 1 teaspoon paprika 1 teaspoon garlic powder Salt and pepper to taste
For the Tomatoes: 2 cups cherry tomatoes 1 tablespoon olive oil Salt and pepper to taste
For the Garlic Herb Sauce: 3 tablespoons olive oil 3 garlic cloves, minced 1 tablespoon fresh parsley, chopped 1 teaspoon dried oregano 1 teaspoon Dijon mustard 1 tablespoon lemon juice Salt and pepper to taste
INSTRUCTIONS:
STEP 1: SEASON THE CHICKEN Season chicken breasts with salt, pepper, paprika, and garlic powder on both sides.
STEP 2: SEAR THE CHICKEN Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
STEP 3: COOK THE TOMATOES In the same pan, add cherry tomatoes with a bit of olive oil, salt, and pepper. Cook until they soften and begin to burst.
STEP 4: MAKE THE SAUCE Lower heat and add olive oil and garlic. Sauté until fragrant. Stir in parsley, oregano, Dijon mustard, and lemon juice.
STEP 5: COMBINE Return sliced chicken to the pan and spoon the garlic herb sauce over the top. Let everything simmer together for 2–3 minutes.
