Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup (120ml) whole wheat breadcrumbs (or Panko for extra crunch)
  • 2 tbsp olive oil (for cooking)
  • Fresh parsley (for garnish, optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Coating: In a bowl, mix the grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. In a separate bowl, place the breadcrumbs.
  3. Coat Chicken: Take each piece of chicken and dip it in the Parmesan mixture, ensuring it’s well coated. Next, roll it in the breadcrumbs.
  4. Arrange on Baking Sheet: Place the coated chicken bites on the prepared baking sheet. Drizzle or spray with olive oil for a crispy finish.
  5. Bake: Bake in the preheated oven for about 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the coating is golden brown.
  6. Serve: Garnish with fresh parsley if desired. Serve warm with your favorite dipping sauce.
