Grilled Chicken

2 chicken breasts

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tsp paprika

½ tsp dried oregano

Salt & black pepper
Salad
-
4 cups mixed greens
-
1 cup cherry tomatoes, halved

1 cucumber, sliced
-
¼ red onion, thinly sliced
-
¼ cup feta cheese (optional)
-
Optional add-ins: olives, avocado, corn
Simple Dressing

3 tbsp olive oil
-
1 tbsp lemon juice or red wine vinegar
-
1 tsp Dijon mustard
-
Salt & pepper
🔪 Instructions
1️⃣ Grill the Chicken

Mix olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.

Coat chicken and marinate 15–30 minutes.

Grill over medium heat 5–7 minutes per side, until cooked through.

Rest 5 minutes, then slice.
2️⃣ Assemble the Salad

Add greens, tomatoes, cucumber, onion, and extras to a large bowl.

Top with sliced grilled chicken.
3️⃣ Dress & Serve

Whisk dressing ingredients.
-
Drizzle over salad just before serving.
