– 1 teaspoon paprika (optional)
– 6 cups mixed salad greens (such as spinach, arugula, or romaine)
– 1 cup cherry tomatoes, halved
– 1 cucumber, sliced
– 1 bell pepper, sliced (any color)
– 1/4 red onion, thinly sliced
– 1 avocado, sliced
– 1/4 cup feta cheese or goat cheese (optional)
– Your favorite salad dressing (balsamic vinaigrette, ranch, etc.)
#### Instructions:
1. Prepare the Chicken: Preheat your grill to medium-high heat. Brush the chicken breasts with olive oil and season both sides with salt, pepper, garlic powder, and paprika (if using).
2. Grill the Chicken: Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center. Remove from the grill and let it rest for a few minutes before slicing.
3. Prepare the Salad: In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, red onion, and avocado.
4. Add the Chicken: Slice the grilled chicken and place it on top of the salad. If desired, sprinkle feta or goat cheese over the top.
5. Dress the Salad: Drizzle your favorite salad dressing over the salad and toss gently to combine.
