These Grilled Zucchini Rollups are the perfect summer appetizer—light, vibrant, and packed with fresh flavor. Grilling the zucchini makes it pliable for rolling while adding a lovely smoky char that complements the creamy, zesty filling.

Grilled Zucchini Rollups with Lemon & Basil

  • Yields: Approx. 20–24 rollups


Ingredients

For the Zucchini:

  • 3 medium zucchini, sliced thinly lengthwise (about 1/4-inch thick)

  • 2 tbsp olive oil

  • Salt and black pepper, to taste

For the Lemon-Basil Filling:

  • 1 ½ cups ricotta cheese (whole milk or part-skim)

  • ¼ cup Parmesan cheese, freshly grated

  • 2 tsp lemon zest (about 1 large lemon)

  • 2 tbsp fresh basil, finely chopped (plus extra whole leaves for garnishing/rolling)

  • Optional: 1 tsp lemon juice or a pinch of red pepper flakes for extra zing


Instructions

  1. Prep the Zucchini: Trim the ends off the zucchini. Using a mandoline or a sharp knife, slice them into long, thin planks. Discard the outermost skin-only slices.

  2. Grill: Preheat a grill or grill pan to medium-high heat. Brush both sides of the zucchini slices with olive oil and season with salt and pepper. Grill for about 1–2 minutes per side until they have light grill marks and are tender enough to bend without snapping. Transfer to a plate to cool slightly.

  3. Mix the Filling: In a medium bowl, combine the ricotta, Parmesan, lemon zest, and chopped basil. Season with a pinch of salt and pepper to taste.

  4. Assemble: Lay a grilled zucchini slice flat. Spread about 1 tablespoon of the ricotta mixture over the length of the slice.

    • Pro Tip: Place a whole small basil leaf at one end before rolling for a beautiful visual pop.

  5. Roll and Serve: Starting from one end, roll the zucchini tightly. Place it seam-side down on a serving platter. Repeat with the remaining slices.


Tips for Success

  • Don’t Overcook: You only want the zucchini pliable. If it gets too mushy, it will fall apart when you try to roll it.

  • Serve Warm or Cold: These are delicious served immediately while the zucchini is still warm, but they also hold up beautifully as a chilled appetizer.

  • Make it Main: You can place these rollups in a baking dish with a layer of marinara sauce, top with mozzarella, and bake at 400°F (200°C) for 15 minutes for a “Zucchini Lasagna” style meal.
