Ingredients:
1 medium head cauliflower, cut into florets (about 4 cups)
1 medium head broccoli, cut into florets (about 4 cups)
30g/1oz butter
30g plain flour
400ml/14fl oz milk
50g/1¾oz mature cheddar, finely grated
Salt and ground black pepper
2 slices of bread, and butter, to serve (optional)
Instructions:
Preheat the oven to 180°C (350°F). Lightly grease a 20cm x 30cm casserole dish.
Place cauliflower and broccoli in a large saucepan. Cover with water and bring to a boil. Cook for 2-3 minutes, until the vegetables are crisp-tender. Drain well and set aside.
To make the sauce, melt the butter in a saucepan on medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened.
Remove from the heat and stir in most of the grated cheese. Season with salt and pepper to taste.
Pour the cheese sauce over the cauliflower and broccoli in the casserole dish. Sprinkle the remaining cheese over the top.
Bake for 20-30 minutes, or until golden brown and bubbling.
Serve hot, with buttered bread if desired.
