Ingredients:
2 cups full fat coconut milk
1 TBsp of powdered gelatin (1 packet) (2 packets makes the texture taste more like Jello…much firmer than a custard)
1 Cup Almond milk (unsweetened)
1/2 Cup of Swerve Confectioners Sugar
1/2 Cup Unsweetened cocoa powder
1 tsp Vanilla extract or 1 vanilla bean (scraped seeds)
1/4 tsp salt
Instructions:
In a mixing bowl pour 1/4 of the coconut milk and mix in the gelatin. Let it sit.
Heat the almond milk and remaining coconut milk on the stove for about 5 mins. Not boiling.
Whisk in the sweetener and cocoa powder into the cool gelatin mixture. Make sure it is blended well.
Pour the hot mixture into the cool mixture while whisking it as it is poured in.
Whisk in the salt and vanilla extract.
Pour custard into your choice of 4 oz sized containers (cups or small mason jars are cool)
Let it chill in the fridge for up to an hour. Enjoy with some berries. Keeps for up to 4 days or freeze them up to a month.
