– 1.5 pounds (700 grams) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
– 1/4 cup olive oil
– 1/4 cup lemon juice
– 3 cloves garlic, minced
– 2 teaspoons dried oregano
– 1 teaspoon dried thyme
– 1 teaspoon paprika
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– Wooden or metal skewers


1. If you’re using wooden skewers, soak them in water for about 30 minutes before grilling to prevent them from burning.

2. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. Mix well to create the marinade.

3. Place the chicken cubes in a shallow dish or a large zip-top bag. Pour the marinade over the chicken and toss to coat the pieces evenly. Cover the dish or seal the bag and refrigerate for at least 1 hour or up to overnight to allow the flavors to develop.

4. Preheat your grill to medium-high heat.

5. If using wooden skewers, thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

6. Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and nicely charred on the outside. The internal temperature of the chicken should reach 165°F (74°C).

7. Once the chicken is cooked, remove the skewers from the grill and let them rest for a few minutes.

8. Serve the grilled souvlaki chicken skewers with tzatziki sauce, pita bread, and your favorite side dishes like Greek salad or roasted vegetables.
