– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 tablespoons coconut oil
– 3 cloves garlic, minced
– 1 tablespoon grated ginger
– Zest of 1 orange
– Juice of 2 oranges
– 2 tablespoons soy sauce (or tamari for gluten-free)
– 1 tablespoon rice vinegar
– 1 tablespoon low-carb sweetener (such as erythritol or stevia)
– 1/2 teaspoon red pepper flakes (optional)
– Salt and pepper, to taste
– 2 green onions, sliced (for garnish)
– Sesame seeds (for garnish)

1. In a large skillet or wok, heat the coconut oil over medium-high heat.
2. Add the minced garlic and grated ginger to the skillet and cook for about 1 minute until fragrant.
3. Add the chicken pieces to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
