3 garlic cloves, minced
3oz fresh spinach, chopped
1/2 yellow onion, diced
1-14oz can artichoke hearts, drained and chopped
1-5.4oz can coconut Cream or 2/3 cup df hwc
1/2 cup avocado oil mayo
1 tbsp lemon juice
1/4 cup nutritional yeast
1/2 tbsp basil
1/2 tsp salt
1/4 tsp black pepper
Preheat oven to 400.
Mince garlic, chop spinach, onion and artichokes. Place into a large bowl.
Add the coconut Cream or hwc, mayo, lemon juice, nutritional yeast, basil, salt and pepper. Mix until well combined.
Transfer to an 8×8 casserole dish and bake for 20 min.
Let cool 10-15 minutes and enjoy!
