Layered Zucchini Ricotta Melts with Marinara
Ingredients
- For the Zucchini Layers:
- 2 medium zucchinis, sliced into 1/4-inch rounds
- Salt and pepper to taste
- Olive oil spray
- For the Ricotta Mixture:
- 1 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder

- For the Marinara Sauce:
- 2 cups marinara sauce (store-bought or homemade)
- Fresh basil leaves for garnish (optional)
Instructions
- Prepare the Zucchini:
- Preheat your oven to 375°F (190°C).
- Arrange the zucchini slices on a baking sheet. Spray lightly with olive oil and season with salt and pepper.
- Bake for about 15 minutes until slightly tender. Remove from the oven and let cool.
- Make the Ricotta Mixture:
- In a bowl, combine the ricotta cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
- Assemble the Melts:
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer half of the zucchini slices over the sauce.
- Spread half of the ricotta mixture over the zucchini.
- Repeat the layers: marinara, zucchini, and ricotta.
- Finish with a final layer of marinara sauce on top.
- Bake:
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, until the top is bubbly and golden.
- Serve:
- Let it cool slightly before slicing. Garnish with fresh basil if desired.
