Ingredients:
• 1 large zucchini (about 300g or 10.5 oz), grated
• 4 tablespoons (40g) rolled oats
• 100g (3.5 oz) shredded mozzarella cheese
• 2 large eggs
• 2 cloves garlic, minced
• 1 teaspoon dried basil (or 2 tablespoons chopped fresh basil)
• ½ teaspoon salt (or to taste)
• ¼ teaspoon black pepper (or to taste)
⸻
Instructions:
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet or round pizza pan with parchment paper or lightly grease it.
2. Prepare the Zucchini
Grate the zucchini using a box grater or food processor. Place the grated zucchini into a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is important to ensure a crispy crust.
3. Mix the Ingredients
In a large mixing bowl, combine the drained zucchini, rolled oats, shredded mozzarella cheese, eggs, minced garlic, basil, salt, and pepper. Mix until everything is well incorporated.
4. Shape the Crust
Spread the mixture evenly onto the prepared baking sheet or pizza pan, shaping it into a circle or rectangle about ½ inch thick. Press down firmly with a spatula or your hands to form a cohesive crust.
5. Bake the Crust
Bake in the preheated oven for 20–25 minutes, or until the edges are golden brown and the center feels firm.
6. Optional: Add Toppings & Bake Again
If desired, remove from the oven and top with extra cheese, vegetables, or lean proteins. Return to the oven and bake an additional 5–10 minutes, or until the toppings are cooked through and bubbly.
7. Cool and Serve
Let the zucchini pizza cool for a few minutes before slicing. Serve warm and enjoy!
