Low-Carb Broccoli Cheese Bites
Ingredients:
1 cup steamed and finely chopped broccoli florets (well-drained and patted dry)
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 large eggs, beaten
2 tbsp unflavored whey protein isolate (adds protein, zero carbs – optional but recommended)
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Cooking spray or oil
Instructions:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease it.
Steam broccoli for 2–3 minutes until tender. Drain and press out excess moisture with paper towels.
In a bowl, combine chopped broccoli, cheddar, Parmesan, eggs, whey protein (if using), and seasonings.
Scoop about 1 tbsp of mixture and form into balls or flatten into disks.
Arrange on the baking sheet and lightly spray with cooking oil.
Bake for 20–25 minutes until golden and crisp on the edges.
Let cool slightly and enjoy warm or store for meal prep!
