Ingredients
2 lbs hamburger
1 pack taco seasoning
1 can enchilada sauce
¼ cup kidney beans
1 ½ cups Shredded cheddar
2 Low carb tortillas (big enough for your pan)
Taco sauce – your choice of spiciness
Preheat oven to 375°
Lay one tortilla on a greased pan (for the oven). Put one pound of hamburger over the first shell. Mix seasoning and enchilada sauce together and pour half of that mixture over the hamburger. Mix together without disturbing the shell.
Spread half the cheese over that mixture.
Lay the second shell and then the other pound of hamburger. Pour the remaining enchilada sauce with seasoning over the hamburger and mix again- easily. Spread remaining cheese over that mixture.
Bake for 40 minutes.
You can add onions, tomatoes,
whatever you’d like. Some
pica d’gallia would be scrumptious with this dish!!
I would HIGHLY recommend burger with less percentage of fat. Or you could cook burger before oven and remove grease, then lessen time in oven.
