🥧 Mini Shepherd’s Pie Cups

Ingredients
1 tbsp oil
1 small onion, finely chopped
250 g ground beef or lamb
2 tbsp tomato paste
½ cup beef stock (or water)
Salt, pepper (optional: pinch paprika or thyme)
2 cups mashed potatoes (prepared)
2 tbsp butter (optional, for topping)
Chopped parsley (optional)
Quick Method
Cook filling: Heat oil, sauté onion 2–3 min. Add meat, brown well. Stir in tomato paste, stock, salt & pepper. Simmer 5–7 min until thick.
Fill cups: Spoon meat into greased muffin tin.
Top potatoes: Pipe or spoon mashed potatoes on top. Dot with butter.
Bake: 200°C (400°F) for 15–20 min until golden (broil 2–3 min for extra color).
Serve: Rest 5 min, garnish, enjoy!
