Garlic Parmesan Chicken Meatloaf Recipe

Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (whole wheat preferred)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (or 2 tbsp dried)
  • 2 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup ketchup (for topping)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, onion, egg, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the Meatloaf: Transfer the mixture to a loaf pan and shape it into a loaf. Spread the ketchup evenly on top.
  4. Bake: Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm.
