Instructions:
1. Prep the Peppers:
• Preheat oven to 375°F (190°C).
• Cut the tops off the bell peppers and remove the seeds.
• Lightly brush with olive oil and place in a baking dish.
2. Cook the Filling:
• In a skillet, heat olive oil over medium heat.
• Add onions, mushrooms, and garlic, sautéing until soft.
• Add ground beef and cook until browned. Drain excess grease.
• Stir in BBQ sauce, Worcestershire sauce, smoked paprika, salt, and pepper.
• Mix in crumbled bacon and half of the shredded cheddar cheese.
3. Stuff & Bake:
• Fill each bell pepper with the beef mixture.
• Top with remaining cheddar and mozzarella cheese.
• Cover with foil and bake for 25 minutes.
• Remove foil and bake for another 10 minutes, until cheese is golden and bubbly.
4. Garnish & Serve:
• Top with crispy fried onions for extra crunch.
