Ingredients:
– 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
– 3 tablespoons olive oil
– 3 cloves garlic, minced
– Juice and zest of 1 lemon
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
### Instructions:
1. Prepare the Marinade:
– In a bowl, mix together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, paprika, salt, and pepper.
2. Marinate the Chicken:
– Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
3. Cook the Chicken:
– Heat a large skillet over medium-high heat. Add the marinated chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
4. Garnish and Serve:
– Once cooked, remove the skillet from heat. Sprinkle fresh parsley over the chicken bites for added flavor and color.
5. Enjoy:
– Serve the lemon and garlic chicken bites warm, either on their own or with a side of your choice, such as rice, salad, or crusty bread.
