Ingredients:
2 cups mashed potatoes, chilled
1 cup cheddar cheese, cubed
1/2 cup flour
2 large eggs, beaten
1 cup breadcrumbs
Oil for frying
Salt and pepper to taste
Chopped chives for garnish
Instructions:
Take a small portion of chilled mashed potatoes and flatten it in your hand.
Place a cube of cheddar cheese in the center and mold the potato around the cheese, forming a ball. Ensure the cheese is completely enclosed.
Roll the potato ball in flour, dip in beaten egg, and then coat thoroughly with breadcrumbs.
Heat oil in a deep fryer or large saucepan to 375°F (190°C). Fry the potato balls in batches until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Season with salt and pepper to taste and garnish with chopped chives.
