One-Pan Herb Roasted Chicken with Potatoes, Peppers & Broccoli

Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 2 teaspoons dried Italian herbs (e.g., oregano, basil, thyme)
    • Salt and pepper to taste
  • For the Vegetables:
    • 4 medium potatoes, diced
    • 2 bell peppers (any color), sliced
    • 2 cups broccoli florets
  • Optional:
    • Fresh parsley for garnish
    • Lemon wedges for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Chicken: In a bowl, mix the olive oil, dried herbs, salt, and pepper. Add the chicken breasts and coat them well with the mixture.
  3. Prepare the Vegetables: In a large bowl, combine the diced potatoes, sliced peppers, and broccoli florets. Drizzle with a little olive oil, sprinkle with salt and pepper, and toss to coat.
  4. Arrange on Baking Sheet: On a large baking sheet, arrange the chicken breasts in the center. Spread the vegetables around the chicken in an even layer.
  5. Roast: Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the vegetables are tender.
  6. Serve: Garnish with fresh parsley and serve with lemon wedges if desired.
