🐟🥔 One-Pan Salmon with Baby Potatoes, Asparagus & Roasted Tomatoes 🍅🌿

This one-pan oven dinner is everything we love: juicy salmon, crispy baby potatoes, tender asparagus, and sweet roasted cherry tomatoes — all baked together in a buttery garlic sauce 😍
Perfect for a quick and healthy family meal!
🛒 Ingredients
✔️ 4 salmon fillets
✔️ 500 g baby potatoes (halved)
✔️ 1 bunch asparagus (trimmed)
✔️ 200 g cherry tomatoes 🍅
✔️ 2 tbsp olive oil
✔️ 2 tbsp butter (melted)
✔️ 3 cloves garlic (minced)
✔️ Salt & black pepper
✔️ Paprika or chili flakes 🌶️ (optional)
✔️ Fresh parsley (chopped)
✔️ Lemon wedges 🍋
👩‍🍳 Method
1️⃣ Preheat oven to 200°C (400°F).
2️⃣ Toss baby potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
3️⃣ Add salmon fillets, asparagus, and cherry tomatoes to the pan.
4️⃣ Mix melted butter with garlic and spices, then spoon over everything.
5️⃣ Bake for 12–15 minutes, until salmon is golden and flakes easily.
6️⃣ Sprinkle with fresh parsley and finish with lemon juice 🍋
⏱️ Tips
🔥 Broil for 2–3 minutes at the end for extra-crispy salmon.
🥗 Serve with a fresh green salad for a complete meal.
