One Pot Beef Burrito Bowl
A simple, hearty dish combining beef, vegetables, and rice in a single pot for a flavorful meal.
Ingredients :
15 ounce can black beans, rinsed and drained.
2 cups chicken stock, or vegetable broth works too.
14.5 ounce can diced tomatoes.
1 Tablespoon olive oil.
½ cup red bell pepper, chopped.
½ cup sweet onion, chopped.
15 ounce can corn, drained.
1 pound lean ground beef.
1 cup jasmine rice, rinsed.
½ teaspoon chili powder, use more for extra spice.
1 Tablespoon taco seasoning.
4 ounce can diced green chiles.
1 cup shredded cheddar/jack cheese.
½ cup salsa, medium spice.
S&P to taste.
Optional Toppings: Sour cream, cilantro, green onions, tomatoes, guacamole, sliced avocados, jalapenos, hot sauce.
Instructions :
1. Warm olive oil in a large pot over medium heat. Add bell pepper and onion, sauté until soft.
2. Introduce ground beef to the pot. Cook while stirring until it turns brown; remove excess grease.
3. Season with salt and pepper. Mix in salsa, black beans, corn, diced tomatoes, green chiles, rice, taco seasoning, and chili powder.
4. Pour in chicken stock, raise heat to bring it to a gentle boil, then lower heat and cover. Let it simmer for 15 minutes or until rice is tender.
5. Stir the mixture, taste, and adjust seasoning if needed. Sprinkle cheese on top.
6. Cover the pot again and let it rest for 5 minutes for the cheese to melt.
7. Serve the dish warm in bowls. Top with your favorite garnishes like sour cream, cilantro, or sliced avocados.
