Pineapple Quick Bread
INGREDIENTS :
For the bread:
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
3 oz. Cream cheese with rolled up
1 cup of sugar
3 teaspoons of vanilla extract
1 large beaten egg
1/2 cup sour cream
1 can (20 oz) crushed pineapple, drained (reserve 2-3 tablespoons of juice for icing)
For the Icing:
1 1/2 cups of powdered sugar
2-3 tablespoons of pineapple juice reserved
INSTRUCTIONS :
Preheat the oven:
Preheat your oven to 350°F (175°C).
Grease a frying pan and set aside.
Mix the dry ingredients:
In a medium bowl, combine flour, baking soda, and salt. Set aside.
Prepare the wet ingredients:
In a separate bowl, beat together the egg, sugar, cream cheese and vanilla extract until smooth.

Refrigerate the bread in the frying pan for about 15-20 minutes, then transfer to a wallet to cool completely.
Prepare the Frosting:
In a small bowl, mix the powdered sugar with the reserved pineapple juice until smooth.
Icing the bread:
Drizzle the icing on the frozen bread.
