Potsticker Hot and Sour Soup
Ingredients:
1 package of frozen potstickers
4 cups chicken or vegetable broth
1 cup sliced mushrooms
1 cup shredded carrots
1 cup baby spinach
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon chili paste
1 teaspoon grated ginger
2 cloves garlic, minced
1 tablespoon cornstarch mixed with 2 tablespoons water
2 green onions, sliced
Salt and pepper to taste
Optional: sesame oil for drizzling
Directions:
In a large pot, bring the chicken or vegetable broth to a simmer over medium heat. Add the sliced mushrooms and shredded carrots, cooking until they are tender, about 5 minutes.
Next, stir in the frozen potstickers and cook according to package instructions, usually around 5-7 minutes.
Add the baby spinach, soy sauce, rice vinegar, chili paste, grated ginger, and minced garlic to the pot. Stir well and let it simmer for an additional 2-3 minutes.
To thicken the soup, stir in the cornstarch mixture and continue to cook until the soup has thickened slightly. Season with salt and pepper to taste.
Before serving, garnish with sliced green onions and a drizzle of sesame oil if desired. Serve hot and enjoy!
