Roasted Garlic Idaho Potatoes
Ingredients:
4 large Idaho potatoes, peeled and cut into wedges
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Fresh parsley, for garnish
Instructions:
Preheat Oven:
Preheat your oven to 425°F (220°C).
Toss Potatoes:
In a large bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
Arrange on Baking Sheet:
Spread the seasoned potato wedges in a single layer on a baking sheet.
Bake:
Bake for 25-30 minutes, or until the potatoes are golden brown and tender, flipping them halfway through the cooking time for even browning.
Add Cheese:
Sprinkle the grated Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with fresh parsley and serve immediately.
Tips:
For extra crispy potatoes, parboil the wedges for 3-4 minutes before roasting.
Feel free to add other herbs, like rosemary or thyme, for additional flavor.
Serve with your favorite dipping sauce, such as sour cream or aioli.
Enjoy your Roasted Garlic Idaho Potatoes!
