These Salmon Patties made with canned salmon are a delicious and easy meal option, perfect for a quick dinner or lunch. They can be cooked in an air fryer or skillet, making them versatile and convenient.
Ingredients:
12 oz canned salmon (boneless, skinless)
1/4 cup shallots or red onions, diced very small
1/4 cup green bell peppers, diced small
1 tbsp minced garlic or 1 tsp garlic powder
1/4 cup mayo
1 egg
2 tbsp parsley, chopped (or 1 tbsp dried parsley)
1 tsp Old Bay seasoning
3 tbsp breadcrumbs (unseasoned, save 1 tbsp to coat the patties)
Cooking spray or 2 tbsp avocado oil
Instructions:
Prepare the Patties:
In a small bowl, whisk together the mayo and egg. In a large mixing bowl, combine the canned salmon, diced shallots or red onions, green bell peppers, minced garlic, chopped parsley, Old Bay seasoning, and 2 tablespoons of breadcrumbs. Pour the mayo and egg mixture into the large bowl and gently mix with a rubber spatula until well incorporated. Form the mixture into about 6 salmon patties. Sprinkle the remaining breadcrumbs on the tops and bottoms of the patties.
Air Fryer Directions:
Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Line the air fryer basket with parchment paper. Add the patties to the basket and spray them generously with oil to help them brown. Air fry the salmon patties for 12-14 minutes, or until they are golden brown and cooked through.
Skillet Directions:
Preheat 2 tablespoons of avocado oil in a large skillet over medium heat. Sauté the salmon patties for 4-5 minutes per side, or until they are cooked through and browned on both sides. If the patties are browning too quickly, reduce the heat to allow the patties to cook through without burning.
