1 lb ground chicken
1 medium zucchini, grated
1 cup fresh corn kernels (or frozen, thawed)
1/4 cup finely chopped onion
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1 egg, lightly beaten
1/2 cup breadcrumbs
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
2 tablespoons olive oil
Directions:
In a large bowl, combine the ground chicken, grated zucchini, corn kernels, chopped onion, minced garlic, cilantro, egg, breadcrumbs, cumin, smoked paprika, salt, and pepper. Mix until well combined.
Form the mixture into 6-8 patties.
Heat the olive oil in a large skillet over medium heat. Add the patties and cook for 5-6 minutes on each side, or until golden brown and cooked through.
Serve the burgers on buns with your favorite toppings, or on a bed of greens for a lighter option.
