Seafood Stuffed Potatoes: A Decadent and Satisfying Dish 🥔🦞
Ingredients:
4 large russet potatoes
1 cup cooked shrimp (chopped)
1 cup lump crab meat
½ cup cooked lobster meat (optional, for extra indulgence)
½ cup sour cream
¼ cup mayonnaise
1 cup shredded cheddar cheese (divided)
¼ cup Parmesan cheese
2 tbsp butter (softened)
2 garlic cloves (minced)
1 tsp Old Bay seasoning
½ tsp smoked paprika
Salt and pepper to taste
Optional: Chopped parsley or green onions for garnish
Instructions:
Bake the Potatoes:
Preheat your oven to 400°F (200°C).
Scrub the potatoes and pierce them several times with a fork.
Bake directly on the oven rack for 50-60 minutes, or until tender.
Prepare the Filling:
Once the potatoes are cool enough to handle, slice each in half lengthwise and scoop out the insides, leaving a thin shell.
In a large bowl, mash the scooped potato with sour cream, mayonnaise, butter, garlic, Old Bay seasoning, smoked paprika, salt, and pepper.
Add the Seafood and Cheese:
Fold in the shrimp, crab meat, and lobster (if using).
Stir in ½ cup of the cheddar cheese and all the Parmesan cheese.
Stuff the Potatoes:
Spoon the seafood mixture back into the potato shells, mounding it slightly.
Place the stuffed potatoes on a baking sheet.
Top and Bake:
Sprinkle the remaining cheddar cheese over the tops of the potatoes.
Bake at 400°F (200°C) for 15-20 minutes, or until the tops are golden and bubbly.
Garnish and Serve:
Sprinkle with chopped parsley or green onions before serving.
