Ingredients

  • 1 lb (450 g) lean ground turkey or lean ground beef

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 4 cups green cabbage, chopped

  • 2 carrots, sliced

  • 2 stalks celery, chopped

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (8 oz) tomato sauce

  • 4 cups low-sodium chicken or beef broth

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • ½ teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)


Instructions

  1. Brown the meat
    In a skillet, cook ground meat with onion and garlic until browned. Drain excess fat.

  2. Add to slow cooker
    Transfer meat mixture to the slow cooker. Add cabbage, carrots, celery, diced tomatoes, tomato sauce, broth, and seasonings.

  3. Slow cook
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until vegetables are tender.

  4. Add rice
    Stir in cooked rice during the last 30 minutes of cooking.

  5. Serve
    Taste and adjust seasoning. Serve hot.
