Spinach and Cheese Puff Pastry Squares
Ingredients:
2 sheets of puff pastry (thawed if frozen)
1 ½ cups spinach (chopped and cooked, excess water squeezed out)
1 cup ricotta cheese (or feta for stronger flavor)
½ cup mozzarella cheese, shredded
1 egg (for egg wash + 1 extra for the filling)
Salt and pepper to taste
Optional: Sesame seeds for topping
Instructions:
Preheat oven to 375°F (190°C).
In a bowl, mix spinach, cheeses, 1 egg, salt & pepper until combined.
Roll out one puff pastry sheet on baking paper.
Spread the spinach-cheese mixture evenly on it, leaving space around edges.
Cover with the second puff pastry sheet, press edges with a fork to seal.
Cut into square portions using a knife.
Brush the top with egg wash (1 beaten egg).
Sprinkle sesame seeds on top (optional).
Bake for 25–30 minutes or until golden and puffed.
Let cool slightly, then serve warm.
