Ingredients:
* 4 boneless, skinless chicken breasts, pounded to about 1/4 inch thickness
* 1/2 cup chopped fresh spinach
* 1/2 cup crumbled feta cheese
* 1/4 cup chopped onion
* 1/4 cup chopped sun-dried tomatoes (packed in oil)
* 2 cloves garlic, minced
* 1 tablespoon olive oil
* 1 teaspoon dried oregano
* 1/2 teaspoon dried basil
* Salt and pepper to taste
Instructions:
* Preheat oven to 375°F (190°C).
* Prepare the filling: In a bowl, combine spinach, feta cheese, onion, sun-dried tomatoes, garlic, oregano, basil, salt, and pepper. Mix well.
* Assemble the rolls: Lay each chicken breast flat. Spoon about 1/4 cup of the filling mixture down the center of each breast. Roll each breast up tightly, securing with toothpicks if necessary.
* Sear the rolls: Heat olive oil in a large skillet over medium-high heat. Sear the chicken rolls on all sides until golden brown.
* Bake: Transfer the seared rolls to a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through.
* Serve: Remove the toothpicks and serve the chicken rolls hot.
