Spinach Pasta Salad with Feta and Cranberries

Ingredients

  • 8 oz whole wheat pasta (like fusilli or penne)
  • 4 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta:
    • Boil water in a large pot. Add the whole wheat pasta and cook according to package instructions. Drain and rinse under cold water to cool.
  2. Prepare the Dressing:
    • In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the cooked pasta, chopped spinach, cherry tomatoes, feta cheese, dried cranberries, and red onion.
  4. Add Dressing:
    • Pour the dressing over the pasta salad and toss gently to combine.
  5. Serve:
    • Chill in the refrigerator for at least 30 minutes before serving for best flavor.
