Ingredients:

• 12 slices of white sandwich bread (trim the crusts off)
• 1/2 cup of softened cream cheese
• 1/2 cup of strawberry preserves
• 2 eggs
• 1/3 cup of milk
• 1 teaspoon of vanilla extract
• 1/2 cup of granulated sugar
• 1 teaspoon of ground cinnamon
• Butter (for frying)

Instructions:

1. Prepare the Filling:
• Mix the cream cheese and strawberry preserves in a small bowl until smooth.
2. Prepare the Bread:
• Flatten each slice of bread with a rolling pin to make them easier to roll.
3. Assemble Roll-Ups:
• Spread a thin layer of the cream cheese mixture onto each slice of bread.
• Roll up the bread tightly to seal in the filling.
4. Prepare Egg Mixture:
• Whisk together the eggs, milk, and vanilla extract in a shallow dish.
5. Coat and Fry:
• Heat a large skillet over medium heat and melt some butter.
• Dip each roll-up into the egg mixture, making sure it’s well coated.
• Fry the roll-ups in the skillet, turning occasionally, until they’re golden brown on all sides.
6. Cinnamon Sugar:
• Mix the granulated sugar and cinnamon in a shallow dish.
• Roll the hot roll-ups in the cinnamon sugar mixture until they’re well coated.
7. Serve:
• Serve the roll-ups warm, optionally with extra strawberry preserves or fresh strawberries on the side for dipping or topping.
