Ingredients

  • Cooked corn
  • 1/2 cup s
  • Mission Yellow corn extra
  • thin tortillas
  • 1 tortilla s
  • Ro-Tel Tomatoes Diced,
  • Mexican Lime & Cilantro
  • 1/2 cup
  • Rosarita No fat green chile &
  • lime refried beans
  • 1/2 cup s
  • Velveeta Shreds Mexican
  • style cheddar blend
  • 2 Tbsp
  • 2 cans (14 ounces each) reduced sodium vegetable broth

Instructions

  1. 1 Place undrained tomatoes, beans, corn and broth in medium saucepan and heat over medium-high heat. Stir until combined. Bring to a boil; reduce heat to low and simmer 5 minutes, stirring occasionally.
  2. 2 heat until hot. Serve topped with tortilla strips and cheese, if desired.
