🛒 Ingredients

Soup Base

  • 1 tbsp olive oil

  • 1 small onion, thinly sliced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 stalk lemongrass, bruised (optional but authentic Thai flavor)

  • 1 tbsp red or green Thai curry paste

Vegetables

  • 1 cup carrots, julienned

  • 1 cup bell peppers, sliced

  • 1 cup zucchini, sliced

  • 1 cup mushrooms, sliced

  • 1 cup baby spinach or bok choy

  • ½ cup cherry tomatoes, halved

Liquids & Flavor

  • 4 cups vegetable broth

  • 1 cup coconut milk

  • 1 tbsp soy sauce or tamari

  • 1 tbsp lime juice

  • 1 tsp honey or maple syrup

  • Salt & pepper to taste

Noodles

  • 150–180g rice noodles or whole wheat noodles

Garnish (Mediterranean Touch)

  • Fresh basil

  • Fresh parsley

  • Chili flakes

  • Lemon zest

  • Olive oil drizzle


👩‍🍳 Instructions

Step 1: Sauté Aromatics

Heat olive oil in a pot. Add onion and sauté until soft. Add garlic, ginger, and lemongrass. Cook for 1 minute.

Step 2: Add Curry Paste

Stir in curry paste and cook for 30 seconds until fragrant.

Step 3: Add Veggies

Add carrots, peppers, zucchini, mushrooms, and tomatoes. Sauté for 2–3 minutes.

Step 4: Build the Broth

Pour in vegetable broth and coconut milk. Add soy sauce, honey, salt, and pepper. Simmer for 10 minutes.

Step 5: Add Noodles

Add noodles and cook according to package instructions (usually 4–6 minutes).

Step 6: Finish

Add spinach or bok choy. Turn off heat. Stir in lime juice.


🍽 Serving

Top with fresh basil, parsley, chili flakes, lemon zest, and a light olive oil drizzle.
