Weeknight Wonton Soup
Ingredients:
1 package of wonton wrappers
1 pound ground chicken or turkey
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon grated ginger
1 clove garlic, minced
4 cups chicken broth
2 cups water
2 cups bok choy, chopped
1 cup sliced mushrooms
2 green onions, sliced
Salt and pepper to taste
Directions:
In a mixing bowl, combine the ground chicken or turkey, soy sauce, sesame oil, ginger, and garlic. Mix until well blended.
Take a wonton wrapper and place a teaspoon of the filling in the center. Moisten the edges with water, fold the wrapper in half to form a triangle, and press to seal. Then, bring the two corners of the triangle together and pinch to seal. Repeat with the remaining wrappers and filling.
In a large pot, bring the chicken broth and water to a boil. Add the wontons and cook for about 5-7 minutes, or until they float to the surface.
Stir in the bok choy and mushrooms, and let them cook for an additional 2-3 minutes until tender. Season with salt and pepper to taste.
Ladle the soup into bowls and garnish with sliced green onions before serving.
