Weight Watchers Dorito Taco Salad


For the Salad:

  • 1 pound lean ground turkey or chicken
  • 1 packet reduced-sodium taco seasoning
  • 1/2 cup water
  • 8 cups shredded lettuce (romaine or iceberg)
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or canned (drained)
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 cup reduced-fat shredded cheddar cheese
  • Baked tortilla chips, crushed (as a Dorito substitute)

For the Dressing:

  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste


  1. Cook the Ground Turkey:
    • In a skillet over medium heat, cook the ground turkey or chicken until browned. Drain any excess fat.
    • Add the taco seasoning and water, following the package instructions. Allow it to simmer until the mixture thickens. Set aside to cool.
  2. Prepare the Salad Ingredients:
    • In a large salad bowl, combine the shredded lettuce, cherry tomatoes, black beans, corn, red onion, cilantro, and shredded cheddar cheese.
  3. Make the Dressing:
    • In a small bowl, whisk together the Greek yogurt, salsa, lime juice, cumin, salt, and pepper. Adjust the seasonings to taste.
  4. Assemble the Salad:
    • Add the cooled seasoned ground turkey or chicken to the salad ingredients.
    • Drizzle the dressing over the salad and toss gently to combine.
  5. Serve:
    • Top the salad with crushed baked tortilla chips to mimic the Dorito crunch.
