I made the peanut butter cheesecake dessert. I decided to make 4 servings instead of six. I also added 1 additional tbsp of the pb powder for a more peanut butter taste. Still only 2 points! I crumbled the brownie on top so it wouldnt get too soggy. I licked the spoon and it was good! I’ll be enjoying these at work for the next 3 days 🙂 recipe posted below!

  • 1 tablespoon honey or sugar-free maple syrup

For the Crust:

  • 1 cup almond flour
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar substitute
  • Pinch of salt

Instructions:

Creating the Cheesecake Base:

  1. In a mixing bowl, combine softened fat-free cream cheese, non-fat Greek yogurt, granulated sugar substitute, vanilla extract, and all-purpose flour. Blend until smooth and creamy.
  2. Add a large egg to the mixture, incorporating it gently to maintain the velvety consistency of the cheesecake base.

Preparing the Peanut Butter Swirl: 3. In a separate bowl, combine natural peanut butter with honey or sugar-free maple syrup, creating a luscious swirl that will elevate the flavor profile of the cheesecake.

Crafting the Crust: 4. For the crust, mix almond flour with melted unsalted butter, granulated sugar substitute, and a pinch of salt. This combination will form the perfect foundation for your cheesecake jars.

  1. Distribute the crust mixture evenly at the bottom of each jar, pressing it down to create a compact and delectable base.

Assembling the Jars: 6. Spoon the cheesecake base over the almond crust in each jar, ensuring an even distribution.

  1. Drizzle the peanut butter swirl over the cheesecake base, creating a mesmerizing pattern that will add a burst of flavor to each bite.

Baking and Chilling: 8. Place the jars in a preheated oven at 325°F for 20-25 minutes, or until the cheesecake is set but slightly jiggly in the center.

  1. Allow the cheesecake jars to cool at room temperature before transferring them to the refrigerator for at least 2 hours to achieve the perfect chill and texture.
